Yeild: 2-3 servings
Time: 30 minutes - 1 hour
Ingredients
Fries:
2 potatoes
Olive oil
Salt
Pepper
Garlic powder
Onion powder
Chicken:
1 lb chicken thighs, boneless, skinless
Olive oil
1 lemon, juiced
1 tbsp garlic, minced
1 tsp black pepper
1 tsp cumin, ground
1 tsp paprika
pinch of turmeric
pinch of ground cinnamon
Toppings:
Red onion, diced
Parsley, chopped
Feta cheese, crumbled
Tzatziki sauce
Directions
Fries:
Preheat air fryer to 350 F. Slice potatoes into desired size for fries (I like mine pretty thin so that they are more crispy, about ¼ in thick). Put sliced potatoes into a bowl and coat in olive oil. Sprinkle your desired amount of salt, pepper, garlic powder, onion powder, and any other seasonings you migh want. Air fry for about 30 minutes or until potatoes reach your desired level of crispiness. Be sure to shake the air fryer basked part way through cooking to ensure all fries cook evenly.
Chicken:
Option to marinate chicken overnight by placing chicken thighs, olive oil, lemon juice, garlic, and seasonings in a bag in the fridge for 12-24 hours prior to cooking.
Chicken also tastes great without marinatine overnight - place chicken thighs in a bowl and coat with olive oil. Add lemon juice, garlic, black pepper, cumin, paprika, turmeric, and ground cinnamon. Mix so that all chicken thighs are well coated.
Grill until chicken is cooked through and reaches an internal temperature of 165 F.
Top:
While fries and chicken are grilling, dice your red onion and chop your parsley. Once fries and chicken are ready, chop chicken into bite sized pieces and place on top of your fries. Top with your desired amount of red onion, parsley, feta, and tzatziki sauce. Enjoy!
Nutritional Benefits
Mediterranean loaded fries are a perfect example of how a meal can be both delicious and nourishing. With crispy roasted potatoes, flavorful marinated chicken, fresh toppings, and creamy tzatziki, this dish offers a balanced combination of carbohydrates, protein, healthy fats, and important micronutrients.
The potatoes serve as the base of the meal and provide carbohydrates, which are the body’s main source of energy. They also offer potassium, which supports hydration and muscle function, along with fiber—especially when the skin is left on. Potatoes are often overlooked, but they can be a very nutrient-dense and satisfying part of a balanced meal.
The marinated chicken thighs provide high-quality protein, which helps with muscle repair, fullness, and maintaining stable energy levels throughout the day. Chicken also supplies important nutrients like iron, zinc, and B vitamins that support metabolism and overall health.
Olive oil, used for both the fries and the chicken marinade, adds heart-healthy monounsaturated fats. These fats help increase satisfaction after meals and support the absorption of fat-soluble vitamins. Olive oil also contains antioxidants like vitamin E and polyphenols that help reduce inflammation.
Fresh toppings like red onion, parsley, lemon juice, and garlic bring both flavor and additional nutritional value. These ingredients provide antioxidants, vitamin C, and plant compounds that support immune health, digestion, and overall wellness.
Feta cheese and tzatziki sauce add richness and flavor while also contributing calcium, additional protein, and probiotics depending on the yogurt used in the tzatziki. These toppings help create a meal that feels satisfying and enjoyable rather than restrictive.
The Mediterranean spices like cumin, paprika, turmeric, cinnamon, garlic, and black pepper add bold flavor without relying heavily on processed sauces or excessive sodium. They also offer anti-inflammatory and antioxidant benefits.
Overall, this meal is a great example of balanced eating. It provides energy, supports fullness, includes a variety of nutrients, and still feels fun and indulgent. It is a reminder that nourishing meals do not have to fit a perfect “healthy” image—they can absolutely include fries, feta, and foods you genuinely enjoy eating.
